Cajun Stir-fry

What you need:

  • 4 TBSP butter
  • 12 oz smoked sausage/kielbasa (nitrate free), sliced
  • 1 lb shrimp, thawed
  • 1 lb chicken, cooked and diced
  • 3 belle peppers, mulitple colors
  • 2 onions
  • 2 zucchini sliced
  • 1 bag frozen ocra
  • 1 TBSP cajun seasoning

What to do:

In a large skillet, melt 2 TBSP butter.  Add the shrimp and kielbasa, and saute until both are cooked and browned.  Add the cooked chicken and incorporate for a few minutes.   Remove meat mixture from the skillet.

To the skillet add the remaining butter and the vegetables, and stir-fry over medium high heat until the veggies are tender.   Add the cajun seasoning.   Add in the meat mixture and mix together to combine.

Notes:

This recipe is enough to make double, so I usually freeze half of it once its all together.

Cauliflower Nachos

What you need:

  • 1 head of cauliflower
  • 1lb ground beef
  • taco seasoning (enough for 1lb of meat see recipe here)
  • 2 cups shredded cheese
  • Assorted nacho toppings (Roasted veggies.  Fresh onions, tomatoes, jalapenos, cilantro, sour cream and/or salsa)

What to do:

Preheat oven to 425 F.  Cut head of cauliflower into one inch thick slices.  Lightly coat both sides of cauliflower with olive oil, and place on baking sheet.  Bake in oven for 20 minutes.

While cauliflower is roasting, brown ground beef in skillet and add in homemade taco seasoning.

When cauliflower is browned to your liking, remove baking sheet from oven.  Top cauliflower with ground beef and cheese (and any other toppings you want roasted).  Bake for another 10 minutes till cheese is melted.  Top nachos with additional fresh toppings if desired.

Cauliflower Pizza Crust

What you need

  • 1 head cauliflower
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  •  2 eggs, lightly beaten

What to do

Preheat the oven to 400F. Lightly grease a baking sheet.

Pulse the cauliflower in a food processor until fine. Steam in a microwaveable bowl for 5-10 minute. Let cool and drain well. (I use a towel to get all the moisture out.) Let cool.

In a bowl, combine the cauliflower with the mozzarella, Parmesan, oregano, salt, garlic powder and eggs. Transfer to the center of the baking sheet and spread into a circle, resembling a pizza crust. Bake for 20 minutes.

Meat Sauce

What you need:

  • 1 lb ground beef
  • small onion, diced
  • 1 14 oz can diced tomatoes
  • 1tsp garlic powder
  • 1 TBSP basil
  • 1 tsp oregano
  • 3-4 cups of any vegetable (chopped broccoli, spiralized zucchini, or spaghetti squash)
  • 2 cups mozzarella cheese

What to do:

Brown ground beef in skillet.  Add in onion, diced tomatoes, garlic powder, basil, oregano and cook still the onions are translucent.

In a 9×13 dish, place desired chopped or spiralized veggies. Pour on meat sauce, and top with shredded mozzarella cheese.  Bake at 350F for 30 minutes.

Bacon Meatloaf

 

What you need:

  • two packs of 16 oz bacon
  • 2 pounds ground beef
  • 1 cup almond flour
  • 1 cup shredded cheddar cheese
  • 1 cup diced mushrooms (optional)
  • 1 medium diced onion
  • 2 eggs
  • 1 TBSP thyme
  • 1 TBSP salt
  • 1 tsp worcestershire sauce
  • 1 tsp pepper

What you do:

** Note:  I usually weave the bacon because it holds everything together better, but you don’t have to.  You can just make the meatloaf and top it with bacon if you like. When i weave it, I do it over wax paper, and then assemble the meatloaf on top of the woven bacon.  When I’m done with the loaf, I simple flip it over into a 9×13 pan and peel off the wax paper and bake.

To make the meatloaf:

Preheat oven to 325F.

Mix beef, almond flour, mushrooms, onion, eggs, thyme, worcestershire sauce, salt and pepper together gently until it is incorporated. Divide mixture into 2.  Shape one half into a rectangle, and  indent the center slightly.  Evenly place shredded cheese in the center, staying away from the edges.  Use the other half of the meat mixture to cover the cheese layer and smooth it out on the edges with the bottom meat layer.  (Think big rectangle burger patty with cheese hidden in the middle).

Bake in the oven for 1 hour until internal temperature reads 160F.  Then, if desired, put under the broiler for a few minutes until outside bacon is nice and crispy.
